Diabetic Dessert? Oh yeah…

When your diabetic life floats along on the sugar tide all day, eating the right foods at the right time, in balance with everything else, is a real challenge.  It’s hard work. You deserve dessert.

Serves 16

1 1/2C 5% ricotta cheese
1/2C light cream cheese
1/2C granulated sugar
3T cocoa
1 egg yolk
1t vanilla extract
3 egg whites
1/3C granulated sugar
3/4C strong brewed coffee
3T chocolate or coffee-flavored liqueur
16 lady finger cookies

Spray a 9″ square baking dish with vegetable spray.

In a food processor, combine ricotta, cream cheese, 1/2C sugar, cocoa, egg yolk and vanilla until smooth; transfer to a bowl.

In another bowl, beat egg whites until soft peaks form. Gradually add 1/3C sugar; continue to beat until stiff peaks form. Gently fold in the egg whites.

Combine the coffee and liqueur.

Put half the cookies in the bottom of prepared dish. Sprinkle 1/2 the coffee-liqueur mix over the cookies. Spread half the ricotta mixture on top. Repeat layers. Cover, chill for at least 3 hours.

Exchanges: 1/2 starch, 1 other carb, 1/2 lean meat, 1/2 fat.
