A great snack for diabetics and everyone else

If you’re diabetic..heck, if you’ve ever been on a diet, you know what it’s like to crave a snack. Anything to quash the feeling that you have to do without. Yes, you can empty the pantry of the cookies and breads, the refrigerator of the chocolate-covered this, and the cream filled that, but the craving remains. If only there was a snack that was great tasting and healthy. Like this one:

Makes 24…roughly

1 1/4lb ground turkey breast, extra lean
1/4C water chestnuts, drained, chopped fine
1/4C fresh cilantro, chopped fine
1T cornstarch
2T fish sauce
1/2t black pepper
3 garlic cloves, finely chopped

1/4C water
1/4C soy sauce, low salt
2T brown sugar
2T chives or green onions, chopped
2T lime juice
2 garlic cloves, finely chopped
1/2t crushed red pepper or to taste

Preheat your oven to 400F. Line a cookie sheet with parchment.

In a large bowl, combine all the meatball ingredients and mix well by hand. Shape into small meatballs, no larger than 1″ in diameter. Place on the cookie sheet and bake for 20 minutes, turning half way through, or until 165F in the center.

Meanwhile, place all the sauce ingredients in a saucepan and heat until the sugar dissolves; set aside.

Put a toothpick in each one and serve with the sauce on the side, and you have a great party finger food. Chill the meatballs and the sauce and you have a great, healthy delicious snack.
