Just in time for summer…Sangria for diabetics

Warm days and nights are upon us – ok, maybe not you, but here in Phoenix, where we cracked the hundred degree mark weeks ago, it’s summer. It’s time to put away the long-sleeves, long pants and mulled-everything. It’s time for Sangria.

Red Sangria
Serves 6

1 bottle good quality red Spanish wine
1 orange, sliced
sangria-21 lemon, sliced
1 peach, pitted and sliced
1/4C Cointreau, or orange liquor
2 packets, Stivia, Splenda or the artificial sweetener of your choice
1/2 liter diet 7-Up, chilled

Combine all the ingredients except the 7-Up in a pitcher and stir to combine well. Chill at least 4 hours, much better overnight. Just before serving, stir in the 7-Up.

Calories: 150, Carbs: 12g, Fiber: 2g, Sugars: 6g. Fat: 0
