“I’m too busy during the day to eat healthy!” You have no idea how many times as a Personal Chef I hear this excuse. This incredibly healthy dish is ready for the oven before your oven gets up to temp!
ROAST PORK LOIN WITH HERBED PEPPER RUB
Serves 4
2-3 pounds pork loin, boneless, rinsed, towel-dried
2T Parmesan cheese, grated
2t basil, dried
2t rosemary, dried, crushed
2t thyme, dried, crushed
1/4t garlic powder
1/4t salt
Preheat your oven to 350.
In a small bowl, combine all rub ingredients well, then liberally apply to all surfaces of the pork loin.
Place the loin in a shallow baking dish, roast about 20 minutes per pound, or until the internal temperature reaches 140. Remove from own, let rest 10 minutes before slicing.
This is tasty enough to stand on its own…the Parmesan gives this recipe an unexpected depth. But if you like, you can pair it with a fruit based mango salsa or the Hot Knives’ Peach Ketchup, the recipe for which you can find elsewhere on this blog.
